Angel Food Cake

1 1/2 cup Egg Whites
1 3/4 cup Sugar
1 1/2 tsp Cream of Tarter
1 tsp Vanilla
1/3 tsp Salt
1/4 tsp Almond extract

Process Sift cake flou with 3/4 cup sugar three times. Beat egg whites until foamy. Add creem of tartar and salt and continue beating until whites of eggs stand in soft (not dry) peaks. Sprinkle 1/2 Tbsp sugar and a time over whites and fold in gently until entire cup of sugar has been added. Sprinkle and fold flour-sugar mixture in same manner. Fold in vanilla and almond extract. Pour in dry ungreased 10" tube pan. Bake 35 min at 375 degrees.
